French Vanilla White Chocolate Cookies

      I have made my fair share of white chocolate chip cookies over the years. It never seems to amaze me how small variations can make for a totally unique cookie.
     In this recipe, I used a packet of instant french vanilla pudding mix in place of some white sugar. This recipe has less butter, one less egg, and less flour than my mom's pudding chip cookies. They come out tall and fluffy yet dense and cakey at the same time. They have a nice crumb and thick texture, very sweet and extremely satisfying.

French Vanilla White Chocolate Cookies
1/2 cup butter, softened
1 (3.4oz.) pkg. instant french vanilla pudding mix
1/4 cup white sugar
1/2 cup light brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1&1/2 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking soda
2 cups white chocolate chips

1. Preheat oven to 350 degrees. In a large bowl, cream together the butter, pudding mix, and sugars.
2. Stir in the egg and vanilla.
3. Add the flour, salt, and baking soda until incorporated. Stir in the chips.
4. Drop with a 3 tablespoon cookie scoop onto baking sheets. Bake for 14 minutes, or until slightly golden around the edges and almost set in the center.
